It was a lucky accident that I saw this recipe here, I was thrilled to try it out. I read the food-processor as ‘Blender’ instead of a ‘chopper’, and this little misunderstanding created a lot of possibilities for me.
I ended up trying to use chicken and salmon both for these type of meat balls and Alhamdolilah, both are quite equally liked.
Ingredients:
1 cup Chicken boneless / Salmon
- 1 egg
- 1 Tablespoon chopped onion
- 1 garlic clove
- few peppercorns
- salt to taste
- 1 teaspoon lemon zest
- Fresh coriander
- Parmesan flavored cheese alternative (Any cheese works though)
- 1/4 cup of cream
- 1 Tablespoon Worcestershire sauce
- 1/2 cup bread crumbs
add 1/4 cup of chicken with cream and egg to the blender and blend at high, when it is pureed, add onions and garlic in it and blend again, then just keep adding more chicken and blending till all chicken is finished. (Alternatively just use food-processor)
Pour the mixture out and add cheese, chopped coriander and crushed pepper to it and mix well. Keep adding breadcrumbs till it forms a sticky dough, but do not add more than 1/2 cup. Keep aside for few minutes. Roll in the shape of balls and bake at 350 degrees for about 15 minutes.
Exact same recipe can be followed using fresh salmon cubes. Just that it will be alot pink than white. And yummier.
These meatballs can be devoured with chutney/sauce or used in any classic pasta and meatballs. I also used a similar version for making Palak-koftay and it turn out pretty good too.
