Oats & Chocolate chip cookie

I have always loved chocolate chip cookies. Ever since I remember. I would have them stocked up for my exams and devour them while being buried in books, the chocolate seemed to wash away the exam pressure – atleast temporarily. And well, this already seems eons ago.

I never tried baking cookies before I got married though. But now with kids – I really like baking them and enjoying them in my solitude. Ahhh!

To make them healthier I add oats to the main recipe. My kids still prefer to bake them instead of having to eat them. so Jars after jars I dunk them in my milk and pray if they begin enjoying this sweet delight as much as I do too.

But lucky enough, many friends happily accept my invite of cookies and tea and they seemingly like it too! and not to mention I love to share it with them!

Here’s how we make them. We need:

  • 1 cup flour
  • 2 cups oats (I used old fashioned Quaker oats)
  • 1 cup butter
  • 1.5 cups milk chocolate chip
  • 1.5 cups brown sugar
  • 1 teaspoon baking powder
  • 1 egg
  • few drops of vanilla essence

We started off by whisking the butter using electric beater, with sugar and then added an egg and baking powder.

Once it was well incorporated, we added flour and oats. (I used electric beater till this stage) then add in the chocolate chips, let your toddler mix.

Drop spoon fulls on a lined cookie sheet and bake at 350 F for about 20 minutes.

If you want chewy cookies you can bake for 10-12 minutes. I like mine brittle so I let them sit in the oven for good 20 minutes. Now resist your temptation and allow the cookies to cool down for few minutes and then enjoy!!! yummy 😀
